Coming up for air

Well I have finally made it through all the research required in my first semester of grad school.  I got buried for a while as I finished my research proposal. All that’s left now is a presentation and a final.  I think I can make it.

Now that my brain has room to think about more important things like blogging, baking, and crafting, how about some pictures from my weekend in College Station.  We’ll start with making cookies for Liza’s ring day.

I started by using this cookie recipe.

Sugar Cookie Recipe:

2 cups of butter (room temp, set it out before you make)
2 cups sugar
3 eggs
2 tsp. vanilla
2 tsp. almond extract
6 1/2 cups flour
1 tsp. baking soda
1/4 tsp. salt
I omitted the lemon extract and increased the almond extract.  These cookies are super easy to make and hold their shape well.  I did not photograph the making of these cookies.  But here are the results.  This is about 2/3 of the dough.  I saved the rest for my Aggie family.

There was practically no spreading.

The royal icing I used came from the same site.

Royal Icing Recipe
1 cup water
6 Tbsp. meringue powder
1 tsp. vanilla extract (use clear vanilla if you want white icing)
1 tsp. almond extract
2 lb. bag of powdered sugar

Again I substituted almond extract in place of the lemon.

At this point, I divided the icing and used Americolor gel food coloring to dye my icing into White, Maroon, and Black.

From there it was just a matter of outlining and flooding the cookies.  My favorites were the ones that ended up with flat dots or stripes.

Of course there were some mistakes along the way.  None of my aTm cookies made it.

The finish cookies turned out pretty well.

      

Once they were dry, I put them in an Aggie bucket and tied them up with some ric-rac. Liza oohed and ahhhed for ever single cookie.  She loved them and that was all I could ask for!

    Riley…you are thebomb.com!!! Thank you so much for being part of my special day. I will remember it forever! ps. I’m glad we have pictures of the cookies because they were gone in less than 24 hours because they tasted soooooooo good! 🙂
